Rosemary-Olive Focaccia

"Returning to the buffet, she helped herself to another piece of Focaccia.."

What more would you want than rosemary and olives with just a dash of Balsamic Vinegar?


This recipe is really easy, it may take a while to prepare but it's worth the wait! I'll definitely trying this again until I perfect it of course. But the first try was amazing!

Of course, everything I do I try to keep it healthy - so without further ado:


Let's Gather Ingredients!

  1. 1 cup of Lukewarm Water

  2. 1 Envelope of Yeast

  3. 2 Cups of Wheat Flour - Divided

  4. 1 Cup of All-Purpose Flour

  5. 2 Tablespoons Olive Oil - keep more on the side for garnishing

  6. 1 Teaspoon of Salt - Extra for garnishing

  7. 1/4 Cup of Rosemary - Fresh!

  8. 1/4 Cup of Olives - sliced in half

  9. I'm going to note here - please ensure you also have a dough hook for your mixer!

  10. Either 2 6" skillets or a baking tray.



Ready? Let's Go!

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Either line the baking tray with parchment paper or your skillets with olive oil.

  3. Fix the dough hook into the mixer and mix the yeast in the warm water and stir to dissolve.

  4. Add 1 cup of the wheat flour and 1/2 cup of the all-purpose flour and stir on a low speed for 2-3 minutes.

  5. Cover and let rise for 30 minutes.

  6. Pour in olive oil, salt and 3/4 of the Rosemary.


  1. Add the remaining cups of wheat flour and all-purpose flour and mix on the a low speed for 4 minutes. It's going to get tough and wrap around the dough hook but that's alright. It should be soft as well but not too soft. If there's an excess of flour, add a little more warm water, only a little.

  2. Dust a light flour on the counter and knead the dough into a ball. Cut the ball in 1/2 and knead each half into a ball.



  1. Place the balls into the skillets or trays and press lightly into the shape of the pan.

  2. Cover the pans and let rise for 30 minutes.

  3. After sitting, slit the surface of the dough with a serrated knife making diagonal cuts lightly.

  4. Lightly brush the Olive Oil on the surface and sprinkle the remaining rosemary and salt on top.

  5. Slice your olives in half and stick them into the dough. (I've only placed mine on half since not everyone partaking of the Focaccia enjoys olives.)

  6. Bake for 25 minutes.

  7. After removing from the oven, lightly brush or drizzle oil oil on the surface and let cool.

  8. Serve with a side of Balsamic Vinegar & Olive Oil separately.
