Loca for Tomato Choka!

Indulge in this Trinidadian West Indian delightful goodness!


So I'm almost positive everyone knows what Tomato-Choka is, and if you don't you're about to find out! This is a spicy, roasted way of having tomatoes and goes best with Sada Roti!


I learned to cook this from my mother when I was in high school. Hands down the best chef I know till this day. I swear to you this woman can cook anything!


What Do You Need?

Pay attention because it can get tricky when you're first learning.


Serves 4:

  1. 6 Tomatoes

  2. 1/2 Onion

  3. 4 Pegs of Garlic

  4. 1 Hot Pepper

  5. Oil

  6. Salt

On a girdle or open flame, roast the garlic, tomatoes and pepper, turning them over frequently for about 20 minutes.

Cut up the onion into slices and put in a bowl. Make sure the bowl is large enough to hold all the ingredients after as well.

Remove garlic and tomatoes from the stove and add to the onion.

Using a hand-blender or a masher, blend the continents of the bowl.

In a saucepan, heat 1 tablespoon of oil.

When this is hot, add the oil over the blended continents. Then add the pepper to the bowl.

If you are able to tolerate spicy food, go ahead and mash this pepper in with your Choka, if not, just leave it in and mix it up to give it a small flavor.

Add salt to your taste


And Voila!



Best served hot with a piece of Sada Roti.
