I've finally learned how to enjoy Kale for a Quick, Easy, Healthy Lunch!

Here's the thing about #Kale, I used to HATE it. I don't think I fully understood how to incorporate it into my meals until now and since this grand discovery, I can't stop eating it! Believe it or not, it's possible to enjoy Kale!
Okay so what's this secret?
Olive Oil!
Not only does it cut the bitterness, but it gives a medium to allow the salt and pepper to adhere to!

Kale - A Nutritional Powerhouse, Low in #Calories, High in #Fiber & has ZERO Fat. I mean, do I need to continue?
Per Calorie, Kale has more iron than beef. Iron is essential for good health, such as the formation of hemoglobin and enzymes, transporting oxygen to various parts of the body, cell growth, proper liver function and more.
Kale is High in Vitamin A & C - Vitamin A good for your vision and skin and Vitamin C which is good for your immune system and hydration.
Now you may also be wondering why I specify #OliveOil in every single post. I like the flavor that Olive Oil introduces into your food. Other than that, Olive Oil is known to be rich in vitamins and minerals due to its non-chemical mode of extraction. It is believed to decrease in the rate of heart disease due to its high content of monosaturated fatty acids. However in this particular meal, Olive Oil gives the best taste to the Kale.
You may have also noticed that I chose to pair this with Pink Salmon. However, any particular protein source you prefer can be incorporated as well. Goes perfectly with Tuna or Chicken Breast!
So What Do You Need?
Kale in the desired amount.
Olive Oil - Based on how much Kale you are preparing, you just need enough Olive Oil to coat the chopped leaves. Not too much as you don't want to end up with a bowl of Kale swimming in oil!
Salt
Gounded Course Black Pepper
Pink Salmon/Tuna
Fresh Lime
Garlic Powder
Paprika
Rinse your Kale well firstly. Depending on where you've gotten the Kale from you more than likely have no idea what bugs, chemicals or remnants of soil is stuck on the leaves. Mine was picked in my garden - grown by my significant other - so I know the only thing I'm worried about is fur from the doggies.
Break the stems off and then chop based on the size you'd prefer. Not too small because then it's difficult to eat. I usually cut approximately 1 leave in longitudinal thirds.
Mix with Olive Oil, a pinch of salt and Grounded Black Pepper.
In a separate bowl, add your Pink Salmon or Tuna and squeeze a bit of lime to cut the freshness of the fish. Add a bit Garlic Powder, a tiny bit Paprika and black pepper to taste and mix well.
Voila! You've just made yourself a quick, simple lunch that's gonna keep you looking fit as a fiddle ;)
