Hickory Smoked Whole Chickens

Chicken like you've never had it before ;)


No words can prepare you for the exquisite taste of this smoked chicken. There's not much to say except, let's get going!

You're going to want to make sure you got your Coals and Hickory Wood Chunks to light your grill.

The wood chunks really give the meat that sweet smokey flavor that you're going to enjoy.


Grocery List:

  1. 2 Whole Chickens

  2. Coals & Hickory Wood Chunks (Found ours at Peake Trading)

  3. Worcestershire Sauce, Fresh Lemon Juice, Coriander, Honey (Sauce)

  4. Coriander, Black Pepper, Salt, Sweet Paprika, Bay Leaf Powder, Brown Sugar & Lemon Zest (Spice Rub for Chickens)

Directions:

  • Wash your chickens thoroughly with cold water and let sit for a few minutes in a basin for the excess water to drain out.

  • Drain the water from the bowl. Separate each chicken into individual bowls.

  • In a separate bowl, mix 2 tablespoons of each ingredient for the Spice Rub except the Lemon Zest.

  • Sprinkle the spices over the chickens and use your hands to gently massage into the meat and the crevices. (Nothing goes inside the chicken.)

  • After this, grate your Lemon Zest over the chickens.

  • Let marinate for 24-48 hours.


  • Make your sauce next. Whisk together 2 tbsp of Worcestershire Sauce, 1 tbsp Honey, 1 tbsp Lemon Juice and 2 tsp Coriander in a separate bowl and set aside.

  • Heat up your grill and maintain a temperature of 350-400 degrees Fahrenheit.

  • Place both chickens on the grill with the wood chunks to the sides and cook for 2 hours.

  • At the 11/2 hour mark, drizzle your sauce over the top and let cook for the remaining half hour.
