What? There's a better way to eat Pancakes?! Indeed so Darling, indeed so. Fluffy, light with just a bit of extra protein from the Yogurt!

If you're a #mom this will be great for you and the #kids, if not then you're probably just obsessed with #pancakes like I am. Who isn't?
I gotta admit, I didn't invent this recipe, just found it and thought I'd give it a try. FYI it's amazing for #breakfast or maybe as a snack.
I've discussed the benefits of #Yogurt & #Honey in my other posts so be sure to check them out! Yogurt is a favorite of mine since it quickly gives me the additional #protein I need before or after the #gym. That's why most of the treats I indulge in contains Yogurt!
So What Do You Need?
"There's no time for chit-chat when there are Chocolate-Chip Pancakes to be eaten." - Kristen Day
2 Cups of Flour
2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 Cup Plain Greek-Yogurt
1 Cup Milk
2 Large Eggs
2 Tablespoons Olive Oil
3 Tablespoons Honey
1 Tsp Vanilla Extract
1/2 Cup of Mini Chocolate Chips
In a large bowl, mix together the flour, salt, baking powder and baking soda.
In a separate bowl, mix together the Greek Yogurt, Milk, Honey, Olive Oil, Eggs and Vanilla Extract. Mix well but do not over beat the eggs.
Add the dry ingredients to the wet ingredients again making sure to not over mix the batter.
Graciously incorporate the Chocolate Chips.
Heat a large skillet to medium heat and either spray with non-stick cooking spray or add butter and let melt.
Using a 1/4 cup measuring cup, scoop batter from the bowl to the skillet. Once the top starts to bubble and the edges look set, flip! Let cook for about a minute or two.
Once finished - Serve with extra Chocolate Chips or Fruit!
