Chicken Tikka Masala - Cheat Code!

We can do this the long way, or the easy way. This recipe is the quick and easy way ;)



WARNING: Spicy! If spice isn't your forte - turn around. Sorry. Maybe I'll do a butter chicken recipe for you lads. Busy Bees! Moms! Students! This one is for you. I know how hectic your day can get, who has more than half hour to stand in front of a stove cooking?!


Preparation time: 20 minutes
Cooking time: 20 minutes

Prep and Cook simultaneously to save yourself time. I'll guide you :)


I'm doing this with a side of Basmati Rice which is just as easy to prepare.


First thing, assemble ingredients - stick to fresh ingredients for the best outcome. Main Ingredient:

I picked this up at Massy. There are a few varieties I'm certain, but I wasn't looking for anything in particular at the time. Simply decided I wanted Indian for lunch and was checking out my available options. I know it says BBQ but I tweaked this recipe to suit what I wanted.

You need like half pack of this. Buy the box - it comes with 2 packets - open one and use half to 2 pieces of breast meat.



Secondly! Gather - Garlic, Ginger, Coriander, Cloves, Lime Juice, Olive Oil, Chicken Breasts.


Instructions: - Serve 4

  1. 2 Chicken Breasts (Boneless, Skinless, Large) - Rinse meat with lime juice and water. Dry meat after by wrapping in a paper towel and pressing gently around the surface. Cut into chunks as shown above.

  2. Using half a head of Garlic - grate approximately 1 tbsp.

  3. Repeat with Ginger - grate approximately 1 tbsp.

This is what you want the garlic and ginger to look like above. Discard any of the rough or stringy pieces.


Now:

Combine all your ingredients in a bowl - chicken, garlic, ginger, lime juice (1 tsp) tikka seasoning and a pinch of salt and mix well.

Allow to marinate for about 15 minutes.



In a separate pot - Boil 2 cups of Basmati Rice with the ratio one cup of rice to 2 cups of water. Wait till water comes to a boil, then add rice. When the water is nearly boiled out, add 1 Tbsp of cloves to the rice and mix thoroughly.

This should take about 10-15 mins total to boil.

No added salt! - The chicken is going to be well seasoned to compensate for the salt in the rice. So boil without salt.


After the 15 minutes marination - in another put, put 2 tbsp of olive oil and add chicken when oil is hot.

Stir and cover the pot for 5 mins. Add only a 1/4 cup of water after the 5 mins and cover the pot again. Your chicken is going to spring its own water so there's no need to add anymore. Until near the end if there's need to create more of a sauce.



Let cook for about 10 mins - check it after since breast meat generally does not take long to cook.

If you want more sauce, add another quarter cup of water.

Be sure to add the water to the side of the pan and never pour directly over meat.


Top off with a bit of coriander and serve :)
