Chicken Kebabs & Rosemary Roasted Potatoes


Not too much effort required for this lunch idea!

Gather around folks! I'm about to help you prepare a lazy Sunday lunch that's also extremely healthy for you. Grab your kebab sticks and some freshly picked rosemary and let's get cracking!


Pre-heat your oven to 325 degrees Fahrenheit. We're going to cook both potatoes and chicken in the oven at the same time.


Tip: Just so you don't run out of time, try prepping and seasoning your meat and cutting up ingredients after cutting up potatoes. Finish your potatoes, stick them in the oven and then come back to your chicken.


First we're gonna do the roasted potatoes, so here's what you need:

  1. 3-4 Potatoes

  2. Olive oil

  3. Black Pepper

  4. Oregano

  5. Salt

  6. 2 Baking trays

Follow this procedure:

  • Wash your potatoes with the skin, scrubbing them thoroughly. If you don't like the skin, peel them off. Then cut them up into edible cube sizes.

  • Wash your rosemary as well.


  • In a bowl, add the potatoes and mix in 1 tablespoon of olive oil, and add black pepper, salt and oregano as per your desired taste.

  • Toss together well.



  • Take a brush, and brush olive oil onto the base of baking trays. Be sure to cover them well with the oil.

  • Add your potatoes to the tray and space them out as best as possible. Do not let any potatoes sit on top of each other.

  • Pull the rosemary leaves from the stem and sprinkle them across your potatoes in the tray.

  • Bake for 45 minutes. After the first 25 minutes, open the oven and flip them over on the other side maintaining the orientation and spacing. This prevents them from burning or sticking to the tray.



Now for the CHICKEN KEBABS!

You need:

  1. 2 Chicken Breasts (Cubed)

  2. Olive Oil

  3. Pineapple (cubed)

  4. Garlic Cloves

  5. Tomatoes (Largely Diced)

  6. Onion - Diced

  7. Salt

  8. Black Pepper

  9. Paprika

  10. Ginger, Garlic and Onion Powders


  • Season your meat with salt, black pepper, paprika, ginger, garlic and onion powder

  • Follow this order on your kebab stick from top to bottm: Pineapple, Chicken, Tomato, Chicken, Onion, Chicken, Garlic, Tomato, Chicken, Onion, Chicken and end with either tomato, garlic, onion or pineapple - depending on your preference.

  • Spread olive oil on baking tray and lay the kebabs on this tray.

  • Bake for 1 hour together with the potatoes already in the oven.


When the potatoes are finished, take them out and empty into a bowl and serve with a kebab stick or two :)
